Located in the basement, the wash-up area is not directly connected to the street for waste removal.

Due to variable attendance at different times of the year, the dishwashing facility doubles up during peak periods

The restaurant's exit area is narrow and requires a vertical tray conveyor with a small footprint but capable of transferring trays from one floor to another in both low and high periods.

Designing the solution
- A wash-up area in a small space that doubles up to absorb peaks in restaurant traffic
- A waste processing system that shreds waste in the wash-up area and sends it up to the garbage room on a higher level.
